Kitchen Hood Suppression Inspections

A commercial cooking suppression system protects a chain of hazards: appliance, cooking oil, hood, plenum, filters and exhaust duct.   10. Set cleaning intervals from cooking hours, process and grease observations; increase frequency for frying, wok and chargrill operations

Understand and apply the guidance

Kitchen hoods need to be checked regularly to make sure they work well in case of a fire, just like any other fire suppression system. If you have a commercial kitchen, you’ll want to make sure that your fire suppression system is ready to go so that your building doesn’t catch fire and cause a lot of damage.

Why Do I Need an Inspection?

In a commercial kitchen, preventing fires should be a top priority. One way to do this is to have your hood inspected, tested, and serviced regularly. Regular inspections of your system will:

  • Make sure the fire suppression system is ready to go in case of a fire;
  • Stop unintended discharge;
  • Give you peace of mind that your kitchen is safe;
  • Make sure fire code and insurance requirements are met;
  • Keep you from getting fined for not following code.

Semi-Annual Inspections
The NFPA says that kitchen hood suppression systems must be checked by a certified professional every six months. During a typical inspection of a kitchen hood, these things are done:

  • Check nozzle and conduit locations.
  • Make sure pipes are tight and secure.
  • Clean nozzles.
  • Check pressured cylinder gauges and hydrostatic test dates.
  • Test the manual pull station.
  • Cut a terminal test link to make sure the automatic actuation cycle works.
  • Make sure electricity and gas are turned off when the system turns on.
  • Replace any parts that need it, such as center link housings, system cartridges, and fusible links.
  • How well electrical interlocks work
  • Write down and tell the inspector about any problems that were found.

After a professional does the twice-yearly inspection, you should have paperwork to show that your system is compliant. This includes tagging, keeping track of any repairs, and a report of the inspection.

Monthly Inspections

Only trained professionals should do the inspections every six months, but the building owner is responsible for the monthly visual checks. A visual check of the nozzles, gauges, and tamper indicators is part of these inspections. The building owner should also check for grease build-up in the hood or duct and make sure the pull station is not blocked.

Common unsafe practices

  • Checking only the cylinder gauge and inspection tag
  • Treating semi-annual service as sufficient regardless of heavy frying, solid fuel or rapid grease accumulation
  • Cleaning visible filters while leaving the plenum, fan and hidden duct coated
  • Moving, replacing or adding appliances without redesigning nozzle and detector coverage
  • Using temporary tabletop fryers or LPG burners outside the protected footprint
  • Painting, taping, tying or obstructing nozzles, links, detectors or the manual pull
  • Failing to test gas and electrical shut-off, alarm transmission and fan sequence together
  • Installing an electrical-only manual release without confirming emergency-power and approval requirements
  • Leaving the manual pull behind stock, a hot appliance or a locked counter
  • Applying water or an unsuitable extinguisher to burning cooking oil
  • Resetting a discharged system or reopening the kitchen before authorised recharge and cause investigation
  • Accepting a cleaning certificate that omits inaccessible or uncleaned duct sections
  • Allowing grease-laden filters to be removed while cooking continues
  • Failing to coordinate tenant, landlord and mall responsibilities where the duct crosses property or fire compartments
  • Not stopping cooking when the suppression system is impaired

Emergency survival steps

  1. Shout a warning, operate the fire alarm and activate the hood system's manual release if it can be reached safely
  2. Turn off heat or fuel only if trained and the control is immediately accessible without crossing flame or smoke
  3. Evacuate customers and staff using the planned exits; close doors where possible and do not delay for equipment or cash
  4. Call 112 from outside and give the kitchen location, floor, access route, fuel type, cylinder storage and missing-person information
  5. Never throw water, wet cloths or ice onto burning cooking oil
  6. Do not move a burning pan or fryer
  7. Use the correct cooking-oil extinguisher only if trained, the fire is still small, the suppression system has activated or is being activated, and a clear exit remains behind you
  8. If fire enters the hood or duct, evacuate even if flames at the appliance appear controlled; hidden grease can continue burning
  9. Do not enter a smoke-filled kitchen to pull the release
  10. Keep staff and bystanders away from roof or external duct discharge points
  11. Do not reset, recharge, clean away evidence or restart appliances until the fire service and authorised specialists release the system and equipment

Limitations

  • Inspection must avoid accidental discharge, unsafe gas release, unplanned power isolation and alarm disruption
  • A visual inspection cannot measure grease throughout inaccessible ducts or prove hydraulic and discharge performance
